Christmas is a time for sharing traditions. This is a simple recipe for Rocky Road with a festive twist.

Great for parties and to share with friends. Package it in glass jars with some ribbon as a gift. We promise you will be asked for more!

What you need 

Ingredients

  • 4 cups (600g) white chocolate (melts or broken up block)
  • 3 tablespoons vegetable oil
  • ¾ cup (105g) pistachios, chopped (leave these out if nut allergy is a consideration)
  • 50g mini marshmallows
  • ½ cup (100g) red glace cherries, halved
  • ¼ cup (20g) shredded coconut
Optional
  • Turkish delight, chopped

Tools

  • Roll pan or sandwich tin
  • Knife
  • Chopping board 
  • Measuring Cup and spoons
  • Medium Bowl
  • Microwave
  • Spoon

What to do

  1. Grease and line a 31cm x 26cm sweet roll pan, with greaseproof paper, allowing a 2cm overhang at both ends. In a medium bowl, combine white chocolate and oil. Melt in the microwave at intervals of 30 seconds and stir until smooth. Add pistachios, marshmallows, cherries, and coconut. Stir until well combined.
  2. Press the mixture into the prepared pan. Refrigerate. for 3 hours or until firm.  Use the ends of the greaseproof paper to help lift the slice from the pan.
  3. Cut into slices. Store in an airtight container in the fridge.
